Oncorhynchus mykiss from the same family as salmon. Red or white flesh, 60 g to 5 kg — unique in colour, size and taste.
Processing
PBO (pin bone out) & PBI (pin bone in), precise trimming styles, frozen or fresh, glazing 0–20%, whole gutted, skin/head on or off, sliced fillets.
Packaging
5–10 kg styrofoam or carton boxes, vacuum/frozen options, customer-oriented packaging, value-added products, and insured world-wide transportation.
